What’s for dinner? That is probably the most classic question asked in every household across all the land. No matter who you are or where you live, you’re hungry or you’re in charge of feeding hungry people…and you need some ideas.

It’s so funny to me how with the changes of the seasons, we all want something new on our dinner menu. With the warmer Spring temps we’re starting to experience, I want more salads, a little bit lighter fare, and usually more complex flavors in the dishes we eat.

I know the internet is basically an endless smorgasbord of recipes…ummm, hello, Pinterest…but I always like to know the recipes that my friends use. They always seem a little more trustworthy somehow. Like…I know this person and I know they wouldn’t eat something gross. Let’s try what they’re having!

I thought it might be fun to round-up a few of my favorite recipes that I’ve shared here before. I’m a fairly lazy cook…so they’ll more than likely be quick and relatively easy to make! Sounds like a winner winner, chicken dinner to me!

Company Pork Chops

Friends…all I can say about this dish is that it’s stinking easy to make and so delicious. I seriously became a little addicted to it after I first made it. I didn’t even want to share any of the left-overs with Jason—the pork chops were that good. They be perfect to pair with some springtime asparagus or a warm spinach salad! Find the recipe HERE.

Quinoa Stuffed Peppers

Stuffed peppers are always a good way to use up extra bits of food you have on hand. You could easily sub rice for the quinoa in this recipe, or even riced cauliflower if you wanted. You could also add more veggies to the mix if you had some hanging out in the fridge. Plus, it’s such a flavorful dish! You can eat it as a main dish or as a side, whichever you prefer. Southwest Quinoa Salad

This salad is seriously one of my fave dishes. It’s full of flavor, tastes super fresh, and is really good for you! That’s a pretty great combo if you ask me. The magic of the salad is that it tastes better the longer it sits. All the flavors marinate together and come alive! This can be eaten as a main dish with some pita or tortilla chips, as a side to a main dish, or a topping for grilled meat or fish. Find the recipe HERE.

Chicken Puffs

Warmer weather means lots of get togethers, including cook-outs, showers, and picnics! These chicken puffs are the perfect little nibbles to take along because they travel well and are just as good at room temperature as they are warm! I’ll admit to even eating them cold! They don’t need a dipping sauce, but can definitely hold their own with a buffalo dipping sauce—yum! Find the recipe HERE.

Ham + Potato Soup

I know it’s not exactly warm-weather food, but we are coming up on Easter…and that almost always means left-over ham. What better way to fix the left-overs than in this tasty soup! It’s not so heavy that it will weigh you down, but it’s so delicious that you just might want a second bowl! Annnnndddd…now I’m hungry! Ha! I’m making gumbo from dinner with a starter I brought home from a recent trip to Texas. Hoping it’s good! I’ve been inspired and encouraged to start sharing more recipes on the blog, so I am going to make the effort to do that!
