6 Low Carb Recipes

I've been eating low carb for a few years now, so it's not overwhelming to me at all to cook in this way. I know that it' not an everyday thing for others, though, so I wanted to share some of my tried and true low carb and Keto-friendly recipes to help make things a little easier on you, if you're looking for some tasty ways to eat healthier in the New Year!
A couple of tips I can offer when you're trying to eat low carb (or make any changes to your diet) are to:
- Be prepared. Many of us have been cooking for years and our same-old recipes become habit and we perform most of them by muscle memory. Just like anything new, learning to incorporate different recipes and foods will be retraining our brains to go through the steps of making them. And just like putting in the time for a new workout or habit, eventually, these new recipes will soon become easy for you to make on the fly.
- Stock your pantry. I'm not telling you to throw out all your food or go out and buy all new, but there are a few things that will make low carb cooking a lot easier: nut butters, almond and coconut flour, eggs, cheese, alternative sweeteners (I prefer Swerve) and cottage cheese. There are a lot more than this, but these staples should allow you to make most of the basic recipes you come across, including mine.
KETO CHEDDAR GARLIC BISCUITS
These KETO CHEDDAR GARLIC BISCUITS are a very good copycat flavor for the ones well love from Red Lobster. When I first started my low carb journey, this was one of the first recipes I started making...and is still one of my favorites. Even people who don't eat low carb enjoy them and often ask for a few extras to enjoy. The best part is that they come together so easily and store well in the refrigerator!
KETO PUMPKIN PANCAKES
I started making these KETO PUMPKIN PANCAKES a few months ago and have been obsessed ever since! The pumpkin flavor is just right...nothing fake or too over the top. You can either make them ahead of time and store in the fridge or freezer or mix a batch (or four) of the batter and make them as needed.
I try to source the cleanest ingredients possible for the foods that we eat. Some we get from local farmers and I try to get the rest from AZURE STANDARD. LOW CARB INDIVIDUAL PUMPKIN PIES
Sticking with the theme of pumpkin...these LOW CARB INDIVIDUAL PUMPKIN PIES are delightfully good and so easy to make! I have made them the last couple of years for Thanksgiving so I could enjoy pumpkin pie along with everyone else. Honestly, though, they're so good and light, that you could enjoy this dessert year-round! They're loaded with protein too, since they're made with eggs.
KETO CHOCOLATE CHIP COOKIES
These KETO CHOCOLATE CHIP COOKIES are my number one go-to treat on my low carb journey. They are easy to make and taste so good! I will admit to even eating the raw cookie dough (oops...don't come after me!). I find that I have the best luck with staying on track when I have foods on-hand that are tasty to eat, but stay within the rules that I try to follow for my food.
KETO SHORTBREAD COOKIES
These KETO SHORTBREAD COOKIES were one of the first "treats" I made when I started to eat low carb. They are easy to make with few ingredients and have just enough "sweetness" to scratch that dessert itch. Perfect with some coffee, anyone would enjoy them as a treat!
KETO SKILLET BREAD
KETO SKILLET BREAD is a yummy way to make a low-carb "pancake" for a crowd. You can make it sweet or savory too, which makes skillet bread a versatile recipe in your arsenal to stay on track with your healthy eating. If you choose to make it savory, it's a great "bread" side with soup.
Whether you're on a health journey or just want to start eating a little better, I hope you find these recipes helpful. I find them all to be delicious and nourishing...and totally doable, even if you're not used to making low carb foods.
