Deviled Egg Board

The funny thing about deviled eggs is that people either really love them or really hate them. I'm on the side of love them, but don't seem to make them as often as I should. One reason why is that I think I'm a little gun shy after a catastrophe I had years ago when making them as a somewhat newlywed. Which is silly because that was probably 20 years ago and now I use my DASH EGG COOKER and they come out every time! If you struggle to peel your hard boiled eggs...this machine is a game changer! On that fateful day, I couldn't get the eggs to peel right and I ended up throwing the entire dozen into the trash. Jason still brings that up when I have something not turn out in the kitchen. He always tells me not to toss it...that he'll still eat it. I think it scarred him to watch me throw food away.
TIP: Another way to help ensure your eggs will peel easier is to use older eggs. The older they are, the more the membrane on the inside of the shell will separate better from the whites of the eggs as they cook.
I was THRIFTING with a friend recently and she spotted a mancala game board in the toy section. She said she'd seen them used as a tray for deviled eggs and decided to grab one to try it out. Not one to miss out on the fun, I picked up the other one! I decided since Easter is upon us, this would be the perfect time to try it out with some deviled eggs. That means I had to actually make them, though. I have been successful in making deviled eggs since that early experience, but I normally leave it to my sister because she's so good at it.
I'm a (45-year-old) grown up, though, so I put on my big girl panties and made my own deviled eggs! Wouldn't you know it...they turned out so great!
What You'll Need to Make Deviled Eggs:
Ingredients to Make Deviled Eggs:
6 eggs
3 T mayo
1 tsp. mustard
1 tsp. apple cider vinegar
Salt + pepper (to taste)
Paprika for garnish
Steps to Make Deviled Eggs:
- Cook your eggs in your DASH EGG COOKER. I put a small hole in the top of the eggs with a safety pin to allow water to get between the egg's membrane and the white of the egg. This makes peeling so much easier and more successful!
- When the eggs are done cooking, instantly dunk them in a bowl of ice water. This will help them stop cooking and will allow you to handle them sooner to peel them.
- Peel the eggs. You're going to be so excited at how well they peel after being cooked in the Dash Cooker!
- In a bowl, combine all the yolks from the eggs you cooked and all the listed ingredients (minus paprika). I use my IMMERSION BLENDER so I can assure that the deviled egg filling is well-combined and really smooth...that's where the magic is!
- Fill your PIPING BAG with the deviled egg filling and pipe it into the eggs.
- Sprinkle with paprika.
- Arrange eggs on SERVING BOARD
*I made my filling with half mayo and half plain Greek yogurt and you'd never be any the wiser! Amp up the protein and cut the calories!
Now, you could enjoy the eggs as is from here, but what fun is that?
You could choose any and all toppings that you want for your eggs...honestly, whatever sounds good to you. I chose bacon (because bacon), cornichon pickles, and sweet jalapeno slices. I really loved the combination of the deviled egg, bacon, and pickle. The sour vinegar taste from the pickle helps to cut the richness of the deviled egg filling and the bacon. Truly a love connection.
Okay, now the whole point of this post is to show you how well the thrifted mancala game board works as a deviled egg serving board. I see these often at the thrift store and garage/ESTATE SALES. You might even have one bumping around in a closet or drawer somewhere. If you're planning on serving deviled eggs on your Easter table or for an upcoming brunch, I think your guests would love this idea!
Some additional deviled egg toppings could include: chives, green or black olives, sliced truffle, blue cheese, basil pesto, pimento cheese, sriracha or hot sauce...and if you're feeling extra fancy...CAVIAR!
I absolutely love the way the deviled egg board turned out and have probably eaten way too many eggs since I created it. Eggs are healthy, though! Especially because these are farm fresh from pasture raised chickens who are loved and treated very well!
