Spring Greens Salad with Pesto, Trader Joe's Beef-Less Ground Beef, and Heirloom Tomatoes
Ok, so…I love to eat. I love delicious food and it makes me happy. When people say they forget to eat, I don’t understand that. That has literally never happened to me. I mean, I’ve had times when I didn’t have time to eat, but you better believe the whole time I wasn’t eating…I was thinking about what I wanted to be eating and what I was going to eat when I could! But I digress…
If you’re having a busy day and don’t have time for a full-fledged meal, I have the perfect salad that will make you feel like you’ve had something substantial and you can make it in less than 10 minutes!
What You’ll Need:
Kirkland’s Brand Pesto Sauce from Costco
Trader Joe’s Beef-Less Ground Beef
Tomatoes (chopped)
Pine Nuts
Directions:
Warm the Trader Joe’s Beef-Less Ground Beef in a pan with the pesto sauce. The “ground beef” is fully-prepared, so you just need to warm it.
Top salad mix with the “ground beef” mixture.
Top with an extra dollop of pesto—if you’re feeling naughty, tomatoes, and pine nuts.
And that’s it! This will quickly become one of your favorite go-to meals…even if you’re not in a hurry!
