Peach Crisp
A few years ago, I went through a crisp craze—whatever yummy fruits were in season, I was going to put a crunchy, cinnamon-y topping on them and bake. There’s just something warm and comforting about a bubbling fruit crisp with a scoop of vanilla ice cream on top that makes you feel good.
The Mr. loves peaches, so when I asked him the other nite what kind of crisp he wanted, there wasn’t even a hesitation. So, peach crisp it was! This recipe is so quick + easy, that you can easily whip it up when you need something special to serve to guests, or even if you just want a tasty dessert for yourself.
What You’ll Need:
4 cups peaches (sliced)—I used frozen this time around and they were good, but they could have used a little more sweetness and ended up making the crisp a little runny. Next time, I’m going to use canned peaches—they never let me down; when the fruit is in season, I’ll use fresh!
½ cup all-purpose flour
½ cup brown sugar
½ cup cold butter—I cut the stick of butter into slices and then quartered the slices to make the butter easier to incorporate into the mix.
1 tsp. ground cinnamon
¼ tsp. salt—The Mr. questioned me using salt in a dessert, but you just need that little bit of salt to make the sweet taste even better!
1 cup rolled oats
Directions:
Preheat oven to 350 degrees F—You’ll be interested to know that as I’m typing out these directions, I realized that I baked the crisp at 375 degrees F…so there’s that. Ha! Everything baked fine, though, so it must be ok.
Layer peach slices in an 8”x8” baking pan—I sprayed the pan lightly with cooking oil…b/c that’s how I roll.
Mix flour, brown sugar, butter, cinnamon, + salt in a bowl. Stir oats into the flour mixture and spread on top of peaches. Full disclosure…I doubled the crisp topping b/c I love it so much! — The original recipe (you can find it HERE) says to use a pastry cutter. I don’t have one, though, so I used my Pampered Chef Mix N Chop and it worked pretty well. You can find the Mix N Chop HERE in a cute pink option to support breast cancer research!
Bake for about 30 minutes—until the top is brown, crunchy, and delicious!
Serve with a scoop of your favorite vanilla ice cream—I ate mine with Halo Top Vanilla Bean and it was so delicious! You can read more about Halo Top Creamery HERE.
I can’t wait for you to try this recipe; it’s so easy, I know it will become a dessert staple for you! Crisps are also a great way to use fruit that’s a little past it’s prime. I usually cut up the fruit and add a little sugar and corn starch to it to make a sauce within the crisp and make sure the fruit is a good balance of sweet + tart.
