Ok, right up front…this is not as delicious as chocolate chip cookie dough. I love cookie dough with all my heart and as much as I would love for this recipe to be all that, it’s not. It is however pretty darn tasty and I’ve also made a brownie version I’ll be sharing soon.

I am a snacker. I basically want/need (you choose) to eat all day. That doesn’t do very good things for the figure, though, so I try to find healthy items I can eat that will taste good, but help me stay within my calorie limit (I track on MyFitnessPal, if you want to look me up—Hilary Prall).

The dessert hummus is healthy, easy to make, and budget-friendly so I say, ‘treat yo-self!’. We’ve been enjoying graham crackers with it, but I think it would be good with vanilla wafers or even apple slices. I used my single-serve food processor (you can find it HERE) to combine all the ingredients and then my Magic Bullet (HERE) to whip the dip—yassss! You don’t have to do both steps, but I wanted mine to be very smooth + light. Refrigerate after making and enjoy cold!

What You’ll Need:

1 can garbanzo beans, drained and rinsed (I towel dry)

¼ cup cashews

¼ cup + 2 Tbsp. maple syrup

2 tsp. sweetener (you can use sugar or artificial sweetener, whichever you prefer)

2 tsp. vanilla extract

3 Tbsp. oats

1/8-1/4 tsp. salt

1/3 cup chocolate chips (+ extra for garnish)

Directions:

  1. Combine all ingredients (minus chocolate chips) in a food processor; blend until smooth

  2. Mix chocolate chips in by hand.

  3. Refrigerate and add extra chocolate chips for garnish when serving.
