5 Yummy Recipes for Cozy Fall Nights!
As soon as the weather turns a little chilly, my first response—what’s for dinner? Ha! Look, yummy food is important and tasty and is something that definitely gives me something to look forward to after a long day.
I know that this time of year is extremely busy for all of us (who am I kidding, life is busy in general), so it can be tough to get good dinners on the table and with some variety. So, I’m rounding-up 5 of my favorite warm-you-up recipes—all in one handy-dandy spot for you—to help make dinner-time a little easier! *Disclaimer: I cannot be held responsible for how addicted you will become to them.
5-Hour Beef Stew—This recipe belongs to an old friend of mine and she shared it with me a few years ago and it was life-changing. Dramatic? Maybe. But seriously, it’s so easy, it’s delicious, and you can double the recipe (eat it for days and then freeze the rest). If I’m feeling extra naughty, I’ll add some crusty bread with it. Bread = a staple with soups + stews.
2. Cheeseburger Soup—I’m gonna be honest here, friends. It took me several years to share this recipe. It’s so delicious and I wanted to be the only one making it and getting the rave reviews. Embarrassing, I know…but I hope you’ll forgive me? You can make several tweaks to the recipe, as well, depending on your taste. I love a flexible recipe! Again…this soup served with crusty bread = perfection.
3. Oatmeal Chocolate Chip Cookies—Not a dinner recipe, but you’ll need dessert, obvs. These cookies get all the love whenever I make them. They’re one of the few family recipes I actually have in my possession, and there’s just something about that that warms my soul. You will win friends with these cookies. Promise.
4. Panang Chicken Curry—This is Jen Hatmaker’s recipe that I kept hearing about in her For the Love Podcast and her book Of Mess and Moxie. I literally have never enjoyed the taste of anything curry, but I kept hearing her talk about this recipe with all the love in her heart and I just HAD TO MAKE IT! I’m so glad that I did, because it is seriously delicious and gets better with every single day that it sits in the fridge. All the flavors just mingle together ever more. And…now I want some. Funny enough, this recipe is the most pinned post I have on Pinterest…so others must be loving it too! Ha!
5. Chicken + Noodles—Listen, not much to say about this recipe, other than it’s literally a hug for your insides. So warm, so cozy, so delicious. You get bonus points if you make homemade noodles.
